Brief
Glasgow boasts a vast array of international restaurants serving authentic food. This project aims to explore Glasgow's diverse culinary scene through photography, while also investigating what constitutes "authentic" cuisine in a restaurant setting. Is it the people making it, the ingredients used, or the paraphernalia employed in the process?
The Work
The execution can be described as:
Research-
Interviewed chefs about their culinary journeys. Organised focus groups. Studied works of visual artists like Josef Koudelka, Mary Ellen Mark, Arnold Newman, Joanie Simon, Andi Oliver, and many more.
Photography-
Captured three themes per cuisine: cooking process, final dish, and chef portraits.
Collaborated with restaurants to access kitchens.
Project Management-
Developed an outreach strategy.
Secured permission to photograph in kitchens.
Collaborated with an illustrator and graphic designer.
Managed post-production and revisions.
Outcome
A high-quality, hard-bound publication showcasing Glasgow's culinary diversity.
A successful print run.
